Ingredients

  • 2 tablespoons butter, divided
  • 1 yellow onion, diced
  • 2 medium carrots, diced
  • 1/2 cup frozen peas
  • 2 cloves garlic, minced
  • 1 teaspoon minced ginger
  • 2 large eggs, beaten
  • 3 cups cold cooked rice
  • 2 tablespoons soy sauce
  • 2 teaspoons Sriracha
  • 2 green onions, thinly sliced

Instructions

  • Melt 1 tablespoon of butter in a wok or large skillet set over medium heat.
