These cinnamon roasted almonds make the perfect snack or healthy sweet treat and only include a few simple ingredients. I’ve made a couple of batches in the past week and the family have adored it every single time.

You will too if you’re a fan of cinnamon sugar sweet treats and you’ll be pleased to know how easy they are to make.

You can use any sugar or sweetener you like in the recipe, including white sugar, brown sugar, coconut sugar or low carb, keto friendly alternatives. It all depends on what you have available and your personal dietary requirements.

To make the easy cinnamon almonds, it’s simply a matter of getting out a medium mixing bowl and briefly whisking the egg white until frothy.

Then whisk through the stevia, vanilla, cinnamon and salt until fully combined.

Stir through the whole almonds until fully coated in the cinnamon sugar mixture.

Pop it all onto a greased baking tray and cook for 15 minutes at a time, tossing around and making sure the almonds are in a single layer and all the cinnamon goodness is evenly distributed.

If you’re wondering what to do with your leftover egg yolk, I usually add it to scrambled eggs or an omelette mixture – so there’s no wastage.

These delicious cinnamon almonds make the perfect Christmas gift, holiday season treat or overall sweet tooth holiday gift, but are also wonderful to enjoy as a snack all year around.

  • 1 Egg White
  • 2 Tablespoons Stevia
  • 1 teaspoon Vanilla Extract
  • 1/2 to 1 teaspoon Ground Cinnamon
  • Pinch of Sea Salt
  • 200g/7 ounces Raw Almonds
  1. Preheat the oven to 120C/250F and get out a baking tray, cookie sheet or baking sheet, lined with well greased baking parchment paper.
  2. Whisk the egg white until frothy.
  3. Add the stevia and vanilla and then whisk until smooth.
  4. Next, whisk through the cinnamon and salt.
  5. Finally, stir through the almonds, ensuring they are all fully coated in the eggy cinnamon mixture.
  6. Move the almonds to the prepared baking tray and ensure they are in a single layer.
  7. Place into the preheated oven for 15 minutes, removing from the oven, tossing the almonds around and placing back in the oven for a further 15 minutes.
  8. Cook for 15 minutes at a time, until they are cooked to your liking. Mine took 45 minutes in total.
  9. Remove from the oven, allow to cool to room temperature to further crisp up, store in an airtight container and enjoy.
