I don’t usually bother with projects that involve a lot of steps. This applies to recipes as well. My desserts use basic pantry ingredients, and almost all of them are simple to make. One of my favorite ways to bake a cake is to take the semi-homemade approach. So if you have birthdays to celebrate, or just want an easy dessert, you are in the right place!

Which cake mix is the best?

The brands that are most popular and readily available are Duncan Hines, Betty Crocker, Pillsbury, and King Arthur. Of these, my favorite is Betty Crocker…but they are all good, and you can’t go wrong with any of them.

How to Make a Box Cake Mix Taste Homemade

Turning a cake mix into a dessert that tastes homemade is easy, and there are so many different ways. That’s what I’m sharing today, along with some easy cake mix recipes. I put together a collection of cake mix hacks, and then some bonus tips that I had to throw in.

Note: these hacks aren’t meant to be used all at once. Choose one or two, give them a try, and see how you like your cake.

ADD LEMON ZEST

Citrus brightens the taste of just about anything you’re cooking. My favorite hack is to add a heaping tablespoon of lemon zest and a tablespoon of lemon juice to a white cake mix. (Pictured in the two images above.) I serve it topped with Cool Whip, and extra lemon zest. Orange zest and orange juice is delicious too!

ADD AN EXTRA EGG

Adding an extra egg will help hold the cake batter together. Some cakes have more air than others, and the extra egg adds denseness…and therefore the cake is more moist.

SUBSTITUTE MILK FOR THE WATER

Using milk instead of water makes for a richer flavor. It also thickens the batter, which results in a moister cake.

ADD ONE TEASPOON OF VANILLA

Vanilla is an ingredient that can be added to all baked goods with amazing results. My best tip is to buy good quality, pure vanilla extract…or even better, make your own. Just combine vanilla beans and vodka in a bottle or jar, let it set for a few months, and you will have the best vanilla ever!

SUBSTITUTE MELTED BUTTER FOR THE OIL

Substituting butter for the oil works miracles, and makes the cake taste like it was made from scratch. Make sure to double the amount. For example, if your cake mix calls for 1/3 cup oil, use 2/3 cups melted butter.

SUBSTITUTE APPLESAUCE FOR THE OIL

Substitutingapplesauce(equal amounts) for the oil will drastically cut down on the fat and calories. Although I wouldn’t consider cake a healthy food, using applesauce instead of oil or butter is a good way to make cake less of a splurge! (Make sure to use ample cooking spray on your pan beause the fat content is much less without the oil.)

USE ONE CAN OF COCONUT MILK AS A SUBSTITUTE FOR ALL LISTED INGREDIENTS

To make a gluten-free/vegan cake, just use a gluten-free cake mix and substitute one13.5 oz. can of coconut milkfor all other ingredients. Bake according to package directions.

USE ONE CAN OF DIET SODA AS A SUBSTITUTE FOR ALL LISTED INGREDIENTS

To make a very low calorie, low fat cake, all you do is combine any SUGAR FREE cake mix with one 12 oz. can of diet soda. Once the two ingredients are in the bowl, beat the mixture on medium speed for the designated time…it’s usually two minutes. This will make a9 x 13 sheet cake, or a layer cake. Divided into ten pieces, each piece calculates out to 130 calories, or about 4 Weight Watchers points.

ADD A BOX OF INSTANT PUDDING

Adding a3.4 oz box of instant puddingto any box cake mix will add extra moisture and give it a denser texture.

FAQs

How do you make a box cake taste like it came from the bakery? ›

More Fat, More Flavor

Most box cake recipes call for vegetable or canola oil. The only trouble is, these oils have almost no flavor. Replace the oil with an equal amount of melted butter (and a pinch of salt if using unsalted butter), to boost richness. For an extra decadent cake, add two tablespoons of mayonnaise.

Should I add an extra egg to box cake mix? ›

Use an extra egg: Most boxed mixes will call for three eggs. Use four for a cake that's richer-tasting and moister. This tip is one I use practically every time I make a boxed cake mix. Substitute dairy: Replace the water called for on the package with dairy.

How do you make a box cake moist and dense? ›

On their own, boxed cake mixes have a structure that's loose and airy. But if you add ¼ cup flour or half a box of instant pudding mix, the texture of the cake becomes denser and tighter, ideal for a pound-cake-like consistency that will hold the shape of a Bundt pan.

What makes a cake mix rise better? ›

Add a leavening agent to the flour. Most cakes will call for a leavening agent like baking powder or baking soda. These create the bubbles you need for the cake to rise.

What does adding sour cream to cake mix do? ›

Sour cream is one of the fattiest dairy products; the extra fat content (for example, adding sour cream to a cake instead of milk) will make the cake moister and richer, says Wilk. "Fat, in any form (butter, lard, cream, etc.) shortens gluten strands, which essentially leads to the most tender baked goods," she adds.

Can I use sour cream instead of oil in cake mix? ›

Mayonnaise, the least likely of the bunch, actually gives the closest result to having used oil, and it retains the flavors of your cake or whatever baked good you are creating very well! Yogurt and sour cream also work in a pinch, but do change the flavor profile a tad.

Do bakers use box cake mix? ›

As a professional baker, I don't often use boxed mixes, but I appreciate how easily they bring a cake together. I think premade mixes are great for beginners gaining confidence around the kitchen and also for last-minute cake "emergencies."

Is it better to beat eggs before adding to cake mix? ›

Martina says, “Late in the mixing stage, eggs will incorporate better if you lightly beat them before adding to the batter. The finished cake may be slightly shorter than expected, but its flavor and tenderness shouldn't be affected.” For egg-leavened cakes, the eggs are crucial.

Is it better to use oil or butter in cakes? ›

Texture:Cakes made with oil tend to be moister and have a more tender crumb. Oil coats the flour proteins better than butter, resulting in a softer texture. Cakes made with butter can have a richer flavor and a slightly firmer texture. Butter contributes to a more traditional and dense cake structure.

What happens if you put 2 eggs in a cake instead of 1? ›

Using too few eggs will make your desserts dense, but using too many will make them rubbery. The explanation for this lies in the fact that eggs are made up of protein. As Fine Cooking explains, when the protein in eggs combines with the protein in flour, they produce the overall structure of the baked good.

What does sour cream replace in cake mix? ›

The best way to use sour cream with a boxed cake mix is to use it to replace the other liquids in the recipe, like milk or water. You can add up to a cup, or essentially the same amount of liquid you were originally meant to add, per the manufacturer's instructions.

Can I use butter instead of oil in cake mix? ›

Most cake mixes call for oil, but butter will bring in amazing flavor. To substitute butter for oil in baking just melt the butter, measure it, let it cool, and add it as you would the oil. Compared to oil, butter will create a cake with a firmer, cakeier texture.

How do you substitute butter for oil in cake mix? ›

It couldn't be easier to substitute butter for oil using a 1:1 ratio. This should work with olive, canola, vegetable, and coconut oils. Simply melt and cool the butter to room temperature, then continue with your recipe. (If the recipe calls for ½ cup oil, use ½ cup melted and cooled butter.)

Can you over mix a box cake mix? ›

You may know what you get when you overmix cake batter: a dense cake with tough texture (and maybe some unappetizing gluey streaks as well). But far fewer bakers know that undermixing batter can cause the same or similar results.

Can you add mayo to cake mix? ›

Made from eggs and oil, which are pretty standard cake ingredients, mayonnaise will boost the moisture level in a cake recipe when added to the batter. It might even gussy up your boxed cake mix enough to taste homemade. While adding mayonnaise to dessert may sound odd, apparently this is an old-timey baking trick.
